Cool Down with this Refreshing Mint & Ginger Lemonade this Summer [Recipe]

South African summer is officially kicking into gear which means, scorching hot summer days spent poolside. And, what better way to cool off this summer with a glass of ice cold, homemade lemonade? This refreshing fresh mint and ginger lemonade recipe from Jenny Ward, the Head Chef at CHEFS in Gardens, Cape Town, is sure to be a hit with young and old this summer.

Jenny’s fresh mint and ginger lemonade is simple to make and perfect to cool the entire family on a hot summer’s day. If the adults in the crew are keen to spice things up a little, this delicious drink also acts as the ideal base for that delightful cocktail at the end of a busy day.

Chef Jenny’s mint and ginger lemonade

Serves 4 – 6

8 large lemons
20g fresh mint
2 tbsp grated ginger
3 cups granulated sugar
2 L sparkling water

Slice the lemons thinly and place them in a large plastic container. Top them with fresh mint and ginger and sprinkle with sugar. With clean hands, rub and squeeze the lemon onto the sugar. Repeat this process 3 times every 15 mins. Strain the thick syrupy liquid. Pour 50ml of this mixture into a jug for every 300ml of sparkling water used.
Garnish with fresh mint, lemon slices and plenty of ice.
