This delicious banana bread is super soft, moist, and fluffy – everything a banana bread should be and more – and is super easy to make.

Thus Palo-friendly version of banana bread is made using cocobut flower and arrowroot instead of wheat flour. Both ingredients can be easily found at most health food shops in South Africa. The banana loaf is also low-carb, nut-free, grain-free, and refined sugar-free. And, because it contains a good amount of eggs it will also give a sizable protein kick.

4 eggs
1/4 cup honey
1/3 cup coconut oil, melted
1/3 cup coconut flour
3 T arrowroot starch
1 T cinnamon
