The resort’s Spice Spoons culinary school aims to teach foodies from around the globe about truly authentic Mozambican flavours, spices, and preparation and cooking techniques. It focuses on highlighting vibrant flavours from both Mozambique’s Portuguese heritage and African island life through learning from personal, passionate chefs to perfect everyday local dishes.

Anantara Spice Spoons

Learn the basics of cooking techniques as well as how to select the best fresh produce, enhance techniques and attend informative masterclasses. Guests will be taught how to craft traditional genuine Mozambican dishes with step-by-step guidance from a trained chef.

A firm favourite is the Prawn Matapa prepared with peanuts and cassava leaves, and cooked in coconut milk with crab or shrimp. Another local delicacy is piri-piri chicken made with succulent chicken pieces cooked in a lemon, garlic and perfectly balanced spicy sauce. All meals are carefully paired with carefully chosen local drinks for a full flavour explosion.
