This Refreshing Stone Fruit Slaw is the Perfect Summer Lunch Accompaniment [Recipe]

Ah, summer, you gorgeous thing! Not only can we bask in the warmer weather, the longer days and the balmy nights, but we also get to enjoy the best of the year’s juicy, summery fruit. With the stone fruit season right around the corner, what could be better than celebrating the summer with a fresh, delicious stone fruit slaw recipe from Justin Bonello?

Peaches, plums and nectarines are the crowning glory of the summer fruit season. They’re bright, beautiful and juicy and incredibly healthy. So whether it’s a special occasion or just a family-round-the-dinner-table event, add a dash of elegance with this gorgeously colourful and delicious stone fruit slaw:

Stone Fruit Slaw

Ingredients

1 tbsp of rice vinegar
A big glug of olive oil
Couple pinches of brown sugar
Juice and rind of 1 lime
Salt and cracked black pepper to taste
1/2 red onion, finely chopped
1 red chilli, deseeded and finely chopped
Chunk of fresh ginger, peeled and grated
3 spring onions, finely sliced
Handful of fresh mint leaves, finely chopped
2 to 3 handfuls of various types of firm stone fruit, pitted and cut into strips

Method

To make a vinaigrette for the slaw, mix together all the ingredients except the fruit, mint and coriander in a salad bowl. Finish by tossing the fruit in the dressing to coat and serve topped with fresh mint and coriander.
